Make ahead easy pie crust (makes 20 pie crusts)

Crust
  • 1 cup flour
  • 1 cup minute oats
  • 1/2 cup brown sugar
  • 1/2 cup butter
Filling
  • 1 small can pumpkin pulp
  • 1 can evaporated milk
  • 2 eggs
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1/2 tsp. salt
  • 1 tsp. pumpkin pie spice
  • 1/2 tsp. vanilla



Cut butter into crust ingredients until crumbly.



Pat 2/3 of crust crumbs into 9x13 pan.

Bake at 350 for 15 minutes.



Mix filling and pour on top of crust.



Sprinkle the rest of crumbs on top of filling.

Bake for another 35 minutes.



Finished product.

Serve warm or chilled with whipped cream.
