Homemade Chicken and Noodles

This is my family's absolute favorite meal. It feeds a lot of people and is more filling than you think. Print the one-page PDF 1 qt. rich chicken broth 6 cups cooked chopped chicken (or less) 2 tsp. salt 6 eggs 6 Tbs. milk or cream 3tsp. salt 1 tsp. baking powder 6 cups flour (or less) Start with about a quart of rich broth in a 2 gallon stock pot (use more if canned broth). Add cooked chopped or shredded chicken. I used 6 cups of meat, but you could used less. That is almost the amount I got from 1 whole chicken. See my post on whole chicken vs. chicken breasts here for information on how to cook the meat and get the broth. Add enough water to fill pot about 3/4 full. If you fill it any more, it will boil over when you add the noodles. Add 2 tsp. salt. Bring to a rolling boil while you make the noodles. Mix with 6 eggs (whisked), 6 Tbs. milk or cream, 3 tsp. salt and about 1 tsp. baking powder. Make a paste. Then add 3 cups all purpose flour to make a sticky ball. Add enough

Skinless Wild Turkey

Print the one-page PDF 1 wild turkey (skinned) 1/4 cup salt 2 Tbs. butter 2 cups water Soak pre-washed turkey in sink of water with 1/4 cup salt for 1 hr. Rinse and towel dry. Coat with 2 Tbs. butter Place in roaster. Add 2 cups water and cover with foil. Bake at 325 for 2-3 hrs or until at least 165 degrees(tested in thigh). If using crock pot, use 1 cup water. Pour pan drippings through a strainer and into a saucepan. Bring to a boil. Thickened Broth pan drippings 2 Tbs. cornstarch or tapioca starch (dissolved in 1 cup water) 1 tsp. salt 1/2 tsp. pepper Add starch, salt and pepper to boiling broth and bring back to a boil by whisking constantly. Pour into a gravy boat. Pour some over sliced turkey to add to moisture, then keep the rest for mashed potatoes.

Printable 1 page recipe here Peanut Butter Granola Ingredients: 1/3 cup coconut oil 1 cup peanut butter (more if chunky) 1 cup brown sugar (can use date sugar or coconut sugar) 6 cups quick oats Instructions: Measure out oats in a large mixing bowl. Melt coconut oil in a sauce pan. Stir in peanut butter and brown sugar until the sugar just dissolves. Pour over oats. Stir until oats are evenly coated, smashing any lumps. Spread into 11 x 17 baking pan. Bake at 325° for 25 minutes stirring half-way through. Cool completely and store in canister.
