Make ahead easy pie crust (makes 20 pie crusts)

Peanut Butter Granola Ingredients:

  • 1/3 cup coconut oil
  • 1 cup peanut butter (more if chunky) 
  • 1 cup brown sugar (can use date sugar or coconut sugar)
  • 6 cups quick oats

Instructions:



Measure out oats in a large mixing bowl.
Melt coconut oil in a sauce pan.




Stir in peanut butter and brown sugar until the sugar just dissolves. 



Pour over oats.



Stir until oats are evenly coated, smashing any lumps.



Spread into 11 x 17 baking pan. Bake at 325° for 25 minutes stirring half-way through.

Cool completely and store in canister.


Basic Granola Ingredients:
  • 1/2 cup coconut oil
  • 1/4 cup honey
  • 1/4 cup maple syrup
  • 1 1/2 cup nuts (toasted taste best) 1/2 cup seeds and/or coconut flakes 3 cups quick oats


This is what toasted nuts look like - lightly browned.  You can do it under the broiler for about 3 minutes or at 375° for at least 10 minutes.


Instructions:




Measure out oats in a large mixing bowl.
Melt coconut oil & stir in honey and maple syrup
Pour over oats and stir until oats are evenly coated.




Spread into greased 11 x 17 baking pan (or larger). Parchment paper helps. Bake at 375° for 20 minutes.




Stir half-way through.




Cool completely, add dried fruit and/or chocolate chips & store in canister.
