Make ahead easy pie crust (makes 20 pie crusts)

Strawberry Fields Salad with Strawberry Dressing

Ingredients:

Salad:

  • 10 oz. spinach
  • 1 lb. strawberries
  • 2 c. cooked chicken
  • 1/4 c. feta cheese
  • 2 green onions
  • 1/2 c. walnuts or pecans
  • 1 Tbs. butter
  • 1 Tbs. brown sugar

Dressing:

  • 4 or 5 strawberries
  • 2 Tbs. balsamic or white wine vinegar or lime juice
  • 2 Tbs. honey
  • 4 Tbs. olive oil
  • 1 tsp. soy sauce or tamari
  • Dash of salt




Melt butter in saucepan




Stir in brown sugar until dissolved.




Add nuts and stir about 2 minutes or until syrup sticks to nuts and gets brown.  Set aside to cool.  You can also choose to just toast the nuts.





Wash strawberries with a good produce wash to remove dirt & pesticides. This also helps produce last longer when placing it back in the refrigerator.  I use this brand. It goes a long way if you use the same water for all produce when you bring it home from the store.



Add spinach to large bowl and tear into smaller pieces with hands.




Slice strawberries onto spinach.  Look how pretty this is!




Add cut chicken (rotisserie works well).  See my video, "Whole Chicken vs. Chicken Breasts", for tips on the most efficient and inexpensive way to prepare cooked chicken for any recipe.




Sprinkle feta cheese on top




Chop onion and sprinkle over all.




In a blender mix all ingredients.  Using the same measuring tool for the oil and following with the honey, helps the honey to slide out easier.





Pour into decanter if you are saving some to serve.




I normally just drizzle it on the salad.




Top with cooled glazed nuts.
