Make ahead easy pie crust (makes 20 pie crusts)

Homemade Flour Tortillas

Ingredients:

  • 2 cups flour (I use unbleached all-purpose) 
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 3/4 cup water
  • 2 Tbs. melted butter or oil 
  • extra flour for rolling out dough

Set cast iron pan on burner at medium high heat.
Get a dish (I use a pie plate), and lay a towel in it for finished tortillas.
Mix flour, baking powder and salt in a bowl.
Add water and melted butter and stir just till mixed.


Finish mixing with hands to incorporate all flour.


Pinch off a ball of dough and squeeze in your hand.


Add more flour to the rolling surface.
Pat dough on surface into a circle with the palm of your hand. Make sure it is thoroughly coated with flour on both sides.


Roll from the center out, turning and flipping as needed to make an even circle and  keep it from sticking.


Brush off excess flour with your hands and toss onto the hot cast iron skillet. 


Turn when brown (about 30 seconds), flip and brown the other side. 


Place the warm tortilla into prepared pan and cover with the other side of the towel. Don’t let it get too close to the hot burner.



 Scrape the pan to move flour to the outside edge, or it will burn on the bottom of the next tortilla. Keep them going until you have used up the dough. It usually makes 8-10 tortillas depending on the size you make them. Rewarm in a moist towel in the microwave or sprinkle with a little water and place in a covered pan in the oven for a few minutes.
