Make ahead easy pie crust (makes 20 pie crusts)

Salted Caramel Apple Crunch Pie




Ingredients:

Crust:

Filling:
  • 6 cups tart apples
  • 1 Tbs lemon juice
  • 1/4 cup flour
  • 1/2 cup sugar
  • 1 tsp. cinnamon
Caramel:
  • 1 cup sugar
  • 1 tsp salt
  • 2 Tbs butter
  • 1 tsp vanilla



Pull out single pie crust dough from freezer to thaw overnight. Use my Make Ahead Easy Pie Crust recipe for best results. Roll out pie crust and place into 9" pie plate. Do not bake. Set aside.



Peel, slice and cut apples into bite-sized pieces to make 6 cups. 
Toss with the lemon juice, flour, sugar and cinnamon. 



Place into pie crust and loosely cover with foil or an oven proof silicone lid. Bake at 375° for 30 minutes or until apples are slightly tender. Remove cover.


Make caramel in a cast iron pan by heating 1 cup sugar on med. high heat for about 5 minutes or until sugar is melted.


When it starts to liquify, stir constantly to prevent from burning and smooth out any lumps of sugar.



When sugar is completely dissolved, add warm cream and whisk in until smooth and bubbly, then remove from heat. 


Add butter, vanilla and salt.  



Stir and immediately pour over apples in the pie.Top with topping of choice and return to 375° oven for another 10 -15 minutes or until slightly crunchy on top. Let cool.




Nut topping:

2 Tbs. butter
2 Tbs. brown sugar
1 cup finely chopped nuts

Mix melted butter with brown sugar, then stir in nuts. Sprinkle over the top of the pie with the hands to distribute evenly. Bake as directed above.




Crumb topping:

2 Tbs. butter
1/4 cup brown sugar
2 Tbs. flour 
1/4 cup quick oats

Mix melted butter with flour. Add in brown sugar, then oats. Crumble over the pie with your hands to distribute evenly. Bake as directed above.
